With busy summer days ahead, this easy chicken salad made with chilled grapes makes for a great healthy make-ahead lunch that you can grab & take with you!
Chilled Grape Chicken Salad
Serves 2
INGREDIENTS:
- 1-2 chicken breasts, cooked, diced or shredded
- 1/2 cup red seedless grapes, halved
- 1/2 cup green grapes, halved
- 1 apple, cored & diced
- 1/2 cup mayo
- 1 lemon, halved
- 1/4 tsp ground black pepper
- 2 cups baby spinach
- 2 tbsp chopped pecans
INSTRUCTIONS:
- In a medium mixing bowl, combine chicken, grapes, apple, mayo, lemon juice, & black pepper.
- Place baby spinach on plate.
- Top with chicken salad mixture.
- Top chicken salad mixture with chopped pecans.
- Enjoy!
Note: This would be great for mason jar storage. Add the chicken salad first, followed by the chopped pecans, and topped off with your baby spinach. Store in fridge for up to 5 days.
