Way back in 1999/2000, my husband and I did a weight loss program called Body For Life. It was a simple program that combined weight lifting, 20 minute HIIT style cardio, a pretty-easy-to-follow meal plan, and a fabulous couldn’t-be-skipped cheat day.
That program helped me to lose 20 pounds in 12 weeks, but it also began my love affair with recipes.
I started collecting cookbooks and magazines, then I started creating binders full of recipes I printed off the internet, and now I have boards full of recipes on Pinterest.
This Tuna Apple Salad is a recipe I tweaked from a Body for Life cookbook called Eating for Life. It’s a fancy take on basic tuna salad, and I highly recommend you give it a try!
Tuna Apple Salad–serves 2 (but I eat the whole thing!)
Ingredients:
- 1 6oz can water-packed tuna
- 1/4 yellow onion, diced
- 1 stalk celery, sliced
- 1 tbsp dill relish
- 1 tsp spicy brown mustard (dijon mustard also works)
- 2 tbsp mayo
- 1 apple, cored & chopped (I leave mine in big chunks)
- handful of walnuts
- baby spinach
Instructions:
- Place baby spinach in a bowl/container.
- In a separate bowl, combine tuna, onion, celery, relish, mustard, mayo, and apple.
- Mix well.
- Top baby spinach with tuna mixture.
- Enjoy!
